Lemon Tea Cake

A good tea time snack with a 'citrussy' flavour....

All purpose flour: 1 1/2 cups
Sugar: 1 cup
Baking powder: 2 tsp
Butter: 2 1/2 tbsp
Eggs: 2
Juice of 1 lemon
Rind of 1 lemon
Nuts (optional)

Beat the sugar and butter
Then add well beaten eggs, the lemon juice and the rind.
Then mix in the flour and baking powder.
Grease a loaf tin or line it with a baking paper.
Pour in the batter and sprinkle chopped nuts of your choice on top if you like

Bake at 180 degrees preheated oven for 30 minutes or until a toothpick inserted at center comes out clean.

  • This is not the usual soft and fluffy kind of cake but a more denser and crusty kind which makes it a perfect choice with tea.
