Malabar Stuffed Chicken Roast



Ingredients:
Chicken-1 whole (approx.1200 gm)

For the marinade:
Turmeric-1 tsp
Red chilly powder-1  tsp
Lime juice- 1 1/2 tbsp
Salt
Clean and skin the chicken.
Make slashes over the chicken with a sharp knife for the marinade to penetrate well.
Marinate the chicken with the given ingredients and refrigerate overnight for best results.

For the filling:
Boiled eggs-2
Onion(finely chopped)-2 large
Green chillies(split )-2-3
Ginger-garlic paste-3/4 tbsp
Chilly powder-3/4 tbsp
Turmeric-1/2 tbsp
Coriander -1/2 tbsp
Curry leaves-2 sprigs
Cashew nuts and Raisins-1/2 tbsp each
Oil -2 tbsp
Salt

Remove the Chicken from the refrigerator and keep aside.
Heat oil in a pan,fry the nuts and remove.
Into the same pan,add the chopped onion and fry until golden colour.
Then add the green chillies and the ginger-garlic paste.Fry until the raw smell goes.
Now add the curryleaves, and the spices one by one.
Adjust the salt,when the oil starts seperating add the boiled eggs and fried nuts.
Mix well and transfer into a plate.
Stuff this fillling into the chicken,Put the two eggs first followed by the rest of the mix.
Tie the legs and wings of the chicken with thick thread or kitchen twine


For shallow frying:
Oil- 4tbsp
Heat oil in the same pan ,shallow fry the chicken.
Fry each side for a couple of minutes to get a light brown colour.
Remove onto a kitchen towel in a plate.


For the gravy:
Onion(chopped) - 4 medium ones
Green chillies(slit)-3-4
Tomatoes(chopped)-3 large ones
Ginger-garlic paste-2 tbsp
Turmeric -1/2 tbsp
Chilly powder-1 tbsp
Coriander powder- 1/2 tbsp
Garam masala-1 tsp
Fennel seed powder- 2 tsp
Salt

Take the same pan with the same oil,fry the onions until transclucent.
Then add the ginger -garlic paste,chopped tomatoes green chillies and fry until the oil starts seperating.
Add the powders one by one along with enough salt and fry for another 3-4 minutes.
Transfer the gravy onto a plate.


Final Stage:
In the oven:
Preheat oven to 190 degrees.Transfer half of the gravy onto a oven proof dish and spread it.On that place the shallow fried chicken and spread the remaining gravy over the whole of the chicken.
Cover with a foil and bake for 1 hour and 45 mins, then remove the foil and bake for another 15 minutes.


On the stove:
Take half of the gravy and spread it in a deep pan with a tight lid.
Place the shallow fried chicken on it and spread the remaining gravy over the chicken.Now close the lid and cook on medium flame flipping the chicken from time to time to get an evenly cooked chicken.It takes an hour or more.
