Oven Roasted Crispy Potatoes


Ingredients:
Potatoes- 4 medium
Olive oil- 4 Tbsp
Semolina-3 Tbsp
Garlic paste(fresh)-1 Tsp
Salt.
Preheat the oven to 180° C.
Cube the potatoes in even size.
Boil water in a pan.When it starts boiling add little salt and add in the potatoes.
Boil for 10 mins or until its half cooked.
Meantime take a roasting pan add 3 tbsp of the olive oil and place it in the preheated oven.
Drain the boiled potatoes in a colander.The potatoes at this point should have a little mushy surface but harder inner part.This helps it in crisping.
Toss the potatoes with the remaining oil,garlic paste and salt.Finally sprinkle with the semolina and toss it well so that the potatoes are evenly coated.
Take the roasting pan from the oven,the oil must be piping hot.Throw in the potatoes and stir well to coat the potatoes.
Return to oven and bake until its golden brown in colour and crusty.Stirring in between baking speeds up the cooking and browning.
Serve hot.

Notes:
Check the salt in potatoes when you add it the second time and add in accordingly.
Any herbs and spices of choice can be added.
Adding Cheese can give a chewy yet crispy potatoes.
